Coal Creek Brewing Company didn't start in a boardroom. It started at a kitchen table with a homebrew kit, a notebook full of failed batches, and a stubborn belief that small-town Illinois deserved a brewery that took itself seriously without taking itself too far.
We opened our doors on South Main Street with six taps, a concrete floor, and a commitment to never cut a corner. Every grain, every hop, every gallon of water is chosen with the same intention we bring to every conversation at the bar.
Four years later, we're still small. Still local. Still brewing the way we said we would — because the alternative was never an option.
